February ~ Buckwheat Groats Breakfast

There’s nothing like a warm and filling breakfast to push you outside to work in February weather. It makes you feel you can tackle the toughest jobs in the worst weather. Buckwheat groats are a great alternative to oats, with its nutty, toasty flavour, and good-for-you antioxidants and prebiotics. AND they’re gluten free! Serves 2 (or 1 very hungry person).

1 C toasted buckwheat groats

1.5 C water

1/4 - 1/2 tsp cinnamon (optional)

Add to a pot, stir, and cook for 15 minutes ‘til soft and water has absorbed. Spoon into bowl and add your favourite fruit toppings (bananas, fresh or frozen/thawed berries, stone fruits, nuts), a splash of honey or maple syrup, and your milk of choice. Now you’re ready to get into the garden!

*Toasted buckwheat groats can be found in health food stores.
